Preheat oven to 350°F. In a large bowl, mix beans, chilies, olives, diced pepper, scallions and sausage. Pour into 9x13 inch sprayed glass casserole dish and spread evenly. Tear baby spinch leaves into small pieces and lay over top. In another bowl, mix eggs, milk and cheese. Gently pour mixture over top and bake for 35 minutes or until center is firm. Let rest 5 minutes and cut into squares.
Great warmed in the microwave for latecomers or quick breakfast next day.
