Beat eggs, water, salt, and pepper in medium bowl until frothy. Stir in fajita mix. Heat butter in a 10-inch skillet over medium heat. Add red and green peppers to skillet and sauté until tender. Stir in chicken. Scramble mixture until eggs are firm and set. Place a teaspoon of scrambled egg mixture in a scoop. Sprinkle with grated cheese and place on a cookie sheet. Repeat until all of the egg mixture is used. Place under broiler until cheese is melted. May be served with salsa.
